Vinification/maturing :
Pressing after 6 to 10 hours of pre-fermentary maceration.
Cold stabilisation, fermentation of the must at 18°c.
Matured on the lees for 4 months.
Tasting notes :
1/ Appearance: pale yellow.
2/ Bouquet: a very fruity nose that is typical of the Sauvignon variety along with some floral notes.
3/ Palate: rounded and lively. The fruit aromas are very pronounced and long.
Serving suggestions :
Fish, seafood.
Serving temperature : 8 to 10°c.
Ageing potential : 2 to 3 years.
