Vinification/maturing
:
Manual grape harvest. Fermenting period : 28 days stainless steel thermo regulated vats. it is aged in the traditional Bordeaux manner, spending between eighteen and twenty-four months in the barrel depending on the quality and the caracteristics of the vintage.
Tasting notes :
The Château Carbonnieux rouge is a full-bodied wine, fleshy, having a nice bouquet and filling every "amateur with admiration".
Serving suggestions
:
It would accompany marvellously every white and resf meats, roasted games, sauced fish as "Lamproie à la bordelaise" cheese as Brebis ans Pyrenées.
