Vinification/maturing :
Total de-stemming. Fermentation and long maceration in temperature-controlled stainless-steel vats. Thanks to a specific system, the cap is constantly kept immersed. Pumped over daily.
Matured in stainless-steel vats for at least 18 months.
Tasting notes :
1/ Appearance: dark red colour.
2/ Bouquet: a complex nose with notes of candied fruit and vanilla.
3/ Palate: nicely rounded and supple in the mouth. Very good balance with a long finish.
Serving suggestions :
Red and white meats - grilled or served in a sauce, poultry and cheese.
Serving temperature : 17° c.
Ageing potential : 10 to 15 years.
