Clay-limestone hillsides containing
deposits of fossils of marine origin (oysters, shells,
pebbles).
Vinification/maturing
:
Grapes picked by hand in successive sorting processes
once the ripening process is at a very advanced stage and the noble rot (botrytis) has reached its peak. Yield
35 hectolitres/hectare.
Traditional vinification in vats.
Matured for 2 years.
Tasting notes :
1/ Appearance: golden colour.
2/ Bouquet: characteristic bouquet with notes
of yellow and exotic fruit mingling with touches of wax, toast
and spices.
3/ Palate: full in the mouth with a sweetish attack leading
into fruit, spice and honey flavours. Good balance between
sugar and acidity without excessive sweetness.
Serving suggestions
:
Aperitifs, with
foie gras, white meats, fish prepared in sauces, blue
cheeses and desserts with chocolate.
Serving temperature
: 7 to
8° c.
Ageing potential
: 15 to 20 years.
