Wine making/ageing techniques:
After picking, the grapes are taken to the sorting table before 6 to 10 hours of maceration and then pressing.
Cold stabilisation of the must (6 days).
Fermentation at controlled low temperatures for 8 to 10 days.
Bottling 6 months after harvesting.
Taste profile:
1/ Appearance: pale colour with light green tints. Clear and brilliant.
2/ Bouquet: initial box-tree notes. A slight mineral touch before opening out into notes of citrus fruit such as grapefruit when the wine is swirled around the glass.
3/ Palate: good aromatic complexity and quite strong character. Quite rounded in the mouth with a supple attack. After-taste of box-tree, citrus and a touch of flint. Good aromatic length.
Food pairings:
All seafood and fish prepared without sauce.
Serving temperature : 8 to 10 °
Ageing potential : 3 to 5 years.
