taken to the sorting table before 6 to
10 hours of maceration and then pressing.
Cold stabilisation of the must (6 days).

| Taste profile: |
1/ Appearance: pale
colour with light green tints. Clear and brilliant.
2/ Bouquet: initial box-tree notes. A slight
mineral touch before opening out into notes of citrus fruit
such as grapefruit when the wine is swirled around the glass.
3/ Palate: good aromatic complexity and quite strong
character. Quite rounded in the mouth with a supple attack. After-taste
of box-tree, citrus and a touch of flint. Good aromatic length. |
